Quick Pickled Cucumber Salad

This quick pickle is the best compliment to a fatty meal like barbecue or a picnic with hamburgers or casseroles. It adds the perfect fresh, vinegar-y bite to a richer dish. YUM!

RECIPE

Ingredients:

  • 2 cucumbers

  • 1/2 red onion

  • Bunch of fresh dill, chopped

  • 1 tsp salt

  • 1/2 tsp cracked fresh pepper

  • 2 tbsp white wine (or red wine) vinegar

  • 1 tbsp honey

Instructions:

Use mandolin to finely chop cucumbers and onion into a bowl. Add all other ingredients, reserve a little dill for garnish at the end. Toss together veggies and refrigerate for at least 30 minutes (overnight even better). Add a little more dill and serve!
