Chipotle Pepper Chicken

No more flavorless dry chicken. Whip out the old crock pot and give this recipe a whirl.

RECIPE

Ingredients:

  • 3-4 chicken breasts

  • 1 7 oz can chipotle peppers in adobo sauce

  • 1 tsp garlic powder

  • 1 tsp onion powder

  • 1 tsp chili powder

  • 1 tsp oregano

  • 1/2 tsp salt

  • 1 cup water or broth

Instructions:

Turn your crockpot on low. Add the chicken breasts and 2 or 3 chipotle peppers with a couple spoonfuls of the adobo sauce. If you like things extra spicy (like me) add the entire can. Add the seasonings and water. Stir. Cook on low for about 6 hours until the chicken is fork tender. Shred with two forks. Add on top of a rice bowl or salad, in a taco, or use the next day for chicken salad with greek yogurt or mayo. YUM!
